Ingredients
- 2 eggs
- 3 tablespoons soy sauce,or tamari
- 3 tablespoons mirin
- 3 tablespoons sake, or wine vinegar
- 1 tablespoon sugar
- 1 tablespoon vinegar
Instructions
1. Boil the Eggs
- Boil eggs for 7 minutes.
- Lower in ice bath
- Peel the eggs
Marinade
- Combine soy sauce (or tamari), mirin, sake (or cooking white wine), sugar and vinegar.
- Marinate eggs for 24h to 2 days.
- periodically change the eggs’ position
- Cut eggs cleanly in half lengthwise
