Ramen Eggs (Ajitama)

Ingredients

  • 2 eggs
  • 3 tablespoons soy sauce,or tamari
  • 3 tablespoons mirin
  • 3 tablespoons sake, or wine vinegar
  • 1 tablespoon sugar
  • 1 tablespoon vinegar

Instructions

1. Boil the Eggs

  1. Boil eggs for 7 minutes.
  2. Lower in ice bath
  3. Peel the eggs

Marinade

  1. Combine soy sauce (or tamari), mirin, sake (or cooking white wine), sugar and vinegar.
  2. Marinate eggs for 24h to 2 days.
  3. periodically change the eggs’ position
  4. Cut eggs cleanly in half lengthwise
