Oatmeal Cookies

Ingredients

  • 113g unsalted butter, cut in cubes
  • 3/4 cup sugar
  • 1 cup (packed) brown sugar
  • 1 tsp salt
  • 1 tsp pure vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon tsp baking soda
  • 1/2 tsp cinnamon
  • 1 cup rolled oats
  • 3/4 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F
  2. Cream the butter in food processor by running until butter is creamy and whipped
  3. Add the sugars and salt and pulse until combined
  4. Add the vanilla and eggs and run until creamy and smooth
  5. Combine flour, baking soda and cinnamon in a small bowl and stir gently
  6. Add to food processor and pulse until a sticky dough forms
  7. Add oats and chocolate chips and pulse a few times
  8. Form 2in cookies
  9. Bake for 10-12m
