Gluten Free Flatbread Recipe
Ingredients
- 105g all purpose gluten free flour blend (with xanthan gum)
- 40g tapioca starch/flour, (kinda works with potato starch)
- ¾ tsp kosher salt
- ½ tsp baking powder
- 1 tablespoon extra virgin olive oil
- ½ cup plain unsweetened plant-based milk
Instructions
Make the dough
- In a large bowl, combine dry ingredients
- Add the oil and milk, mix well until stiff
- Divide in 4 small balls, wrap each tightly in plastic wrap, and chill for 30 minutes
- Flatten dough and sprinkle lightly with extra flour. Gather the dough together and repeat the process at least once more, until the dough is smoother
- Cook on cast iron, 1m each side
