Gluten Free Flatbread Recipe

Prep Time: 15min Cook Time: 15min Servings: 2 flatbreads

Ingredients

  • 105g all purpose gluten free flour blend (with xanthan gum)
  • 40g tapioca starch/flour, (kinda works with potato starch)
  • ¾ tsp kosher salt
  • ½ tsp baking powder
  • 1 tablespoon extra virgin olive oil
  • ½ cup plain unsweetened plant-based milk

Instructions

Make the dough

  1. In a large bowl, combine dry ingredients
  2. Add the oil and milk, mix well until stiff
  3. Divide in 4 small balls, wrap each tightly in plastic wrap, and chill for 30 minutes
  4. Flatten dough and sprinkle lightly with extra flour. Gather the dough together and repeat the process at least once more, until the dough is smoother
  5. Cook on cast iron, 1m each side
