Garlic Dill Pickles

Make for 12 jars

Ingredients

  • 6 liter pickle cucumbers
  • 2 1/2 cups apple cider vinegar
  • 2 1/2 cups white vinegar
  • 5 cups filtered water
  • 1/2 cups pickling salt
  • 24 garlic cloves, peeled
  • 24 unit dill
  • 12 teaspoons black peppercorns
  • 12 teaspoon red chili flakes (optional)

Instructions

  1. Wash jars & boil lids for 5m
  2. Spear cucumbers; peel garlic; divide dill, peppercorn and chili flakes
  3. Fill jars

Pickling Vinegar

  1. Bring vinegar, water, and salt in to a boil
  2. Fill jar leaving 6mm headspace
  3. Remove any air bubbles from jars by gently tapping them
  4. Wipe rims and apply lids and bands (don't screw them on too tightly).
  5. Lower jars into hot water bath for 10m after boiling
  6. Cool jars and check seal
