Ingredients

Cake Ingredients

  • 4 egg yolks
  • 75g sugar
  • 1 tsp vanilla extract
  • 1/3 cup water
  • 1/4 cup canola oil
  • 150g all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Meringue Ingredients

  • 4 egg whites
  • 1/2 tsp vinegar or cream of tartar
  • 75 cup granulated sugar

Instructions

Make the Meringue (stand mixer)

  1. Froth egg; whip 3, 1m
  2. Add vinegar; whip 1m
  3. Add sugar in third; whip 10, 3m

Mix the egg yolks

  1. Hand mix in large bowl
  2. Add egg yolks and sugar; whisk
  3. Add the oil and vanilla; whisk
  4. Add the water; whisk
  5. Sift flour, salt, and baking powder
  6. Add powders; whisk until smooth
  7. Add the meringue in third; fold until homogeneous

Bake (instant pot air fryer)

  1. Place 6in pan on trivet
  2. Cover with slit foil
  3. Bake at 350F for 12m

Bake (oven)

  1. Bake at 350F on middle for 10-15m, covered with slit foil
