Cherry Compote

Ingredients
- 1kg fresh cherries
- 50g sugar
- 40g dried sour cherries, optional
- 2 teaspoons kirsch, or eau-de-vie
- 1-2 drops pure almond extract
Instructions
- Stem and pit the cherries
- Stir in sugar
- Turn the heat to medium, cover, and cook for 10m, cover and stir frequently
- Add the sour cherries
- Cook for another 5m-10m
- Remove from heat and stir in the kirsch and almond extract
- Let cool
