Cherry Compote

Ingredients

  • 1kg fresh cherries
  • 50g sugar
  • 40g dried sour cherries, optional
  • 2 teaspoons kirsch, or eau-de-vie
  • 1-2 drops pure almond extract

Instructions

  1. Stem and pit the cherries
  2. Stir in sugar
  3. Turn the heat to medium, cover, and cook for 10m, cover and stir frequently
  4. Add the sour cherries
  5. Cook for another 5m-10m
  6. Remove from heat and stir in the kirsch and almond extract
  7. Let cool
